Vegan Chocolate Protein Mousse

Ingredients

  • 400 g silken tofu (drained)
  • 100 g unsweetened cacao powder
  • 60 ml almond milk (or any other non-dairy milk)
  • 1 ripe bananas
  • 4-5 medjool dates (pitted)
  • 5 ml vanilla extract
  • 2 tsp cashew butter (or other nut-butter of choice)
  • A pinch of salt
  • 1 tbsp coconut oil

Instructions 

  • In a food processor or blender, combine the tofu, cacao powder, almond milk, ripe bananas, medjool dates, cashew butter, coconut oil, vanilla extract and a pinch of salt.
  • Blend until smooth and creamy.
  • Pour into serving glasses and chill in the fridge for 30 minutes or until firm.
  • Serve chilled and enjoy your homemade healthy chocolate mousse with cashew butter or sugar free chocolate shavings
