Preheat oven to 350°F (180°C).
In a large mixing bowl, combine the oats, nuts, dried fruit, and cinnamon.
In a separate bowl, mix together the mashed banana, almond milk, and vanilla extract.
Pour the wet mixture over the dry mixture and stir until well combined.
Spread the mixture onto a lined baking sheet and bake for 20-25 minutes or until golden brown, stirring occasionally.
Remove from the oven and let cool completely.
Serve with additional fruit, almond milk or coconut yogurt, if desired. Enjoy!
