Toasted Cinnamon-Crunch Naturally Sweetened Muesli

Ingredients

  • 2 cups rolled oats
  • 1/2 cup chopped nuts (almonds, walnuts, pecans, etc.)
  • 1/4 cup dried fruit (raisins, cranberries, etc.)
  • 1 tsp cinnamon
  • 1 ripe banana (mashed)
  • 1/2 cup almond milk
  • 1 tsp vanilla extract

Instructions 

  • Preheat oven to 350°F (180°C).
  • In a large mixing bowl, combine the oats, nuts, dried fruit, and cinnamon.
  • In a separate bowl, mix together the mashed banana, almond milk, and vanilla extract.
  • Pour the wet mixture over the dry mixture and stir until well combined.
  • Spread the mixture onto a lined baking sheet and bake for 20-25 minutes or until golden brown, stirring occasionally.
  • Remove from the oven and let cool completely.
  • Serve with additional fruit, almond milk or coconut yogurt, if desired. Enjoy!
