Simple Healthy Vegan Chocolate Cake

Ingredients

  • 1 and 1/2 cups whole wheat flour or almond flour
  • 1/3 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 ripe bananas (mashed)
  • 1/2 cup unsweetened applesauce
  • 1/4 cup melted coconut oil or any other neutral oil
  • 2 teaspoons vanilla extract
  • 1/4 cup water or non-dairy milk

Instructions 

  • Preheat oven to 350°F (175°C). Grease an 8-inch round cake pan or line with parchment paper.
  • In a large mixing bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
  • In a separate bowl, combine mashed bananas, applesauce, melted coconut oil, vanilla extract, and water or non-dairy milk.
  • Add the wet ingredients to the dry ingredients and stir until just combined. Do not overmix.
  • Pour batter into the prepared cake pan and smooth the top with a spatula.
  • Bake for 25-30 minutes or until a toothpick inserted in the center of the cake comes out clean.
  • Let the cake cool completely in the pan, then remove and serve as desired. Enjoy!
