- Ensure a sterile environment – make sure that the glass jar you use to set your yoghurt in is clean, sterile and dry. You can do this by pouring in boiling water and then letting air dry prior to use.
- Maintain proper temperature for setting: It’s crucial to maintain a warm environment for the coconut yogurt to set properly. Using an esky filled with warm water helps maintain the ideal temperature for fermentation.
- Blend for smoothness: Once the coconut yogurt has set, blending it until smooth ensures a creamy texture. You can also adjust the sourness by adding citric acid to taste for a sour cream variation.
- Experiment with flavors: Get creative with your coconut yogurt by experimenting with different flavor variations. You can add vanilla extract, fruit purees, or sweeteners like honey or maple syrup for added taste and variety.
- Experiment with different brands of coconut creams- I have two brands you can buy in Australia that without fail will make creamy, these are Trident and the humble Coles brand, they will always make me insanely delicious yoghurt. Other brands sometimes might have a slightly different taste to them that might just not appeal to you. So taste test prior to cooking with your yoghurt and experiment with different brands available to you in your area.
- Probiotic capsules – make sure your probiotic capsules are within their use by date, otherwise the active properties within them may not work.
- Keep an eye on your pot – don’t let your eye wander when you’re boiling and stirring your yoghurt. If you look away for 10 seconds I guarantee you’ll look back, the pot will have boiled over and you’ll have a big mess to clean up, so keep eagle eyed and watch!

Homemade Creamy Thick Coconut Yoghurt
Equipment
- 1 Small eski
- 1 large glass jar with lid
- 1 large pot
- 1 wisk
- 1 blender
Ingredients
- 2 cans of coconut cream
- 3 tsp agar agar
- ½ Pro-biotic capsules
Instructions
- Bring coconut milk and agar gar to a rolling boil, stirring frequently (do not stop stirring!)
- Let lightly boil for 8-10 minutes to ensure the agar is activated.
- Take off heat. Stir intermittently until temperature drops to below 35 degrees
- Get your probiotic capsules, and snap open. Empty the contents into your mix and stir through.
- Add your mix into sterile glass jars ad close the lid.
- Fill small esky with warm water up to the top of the coconut yoghurt container (not over)
- Add in your container of coconut yoghurt into the warm water bath eski. Leave for 12-24 hours to set.
- Once set take out and blend til smooth with a high power blender. You can add small amounts of coconut cream/milk if needed but don't overdo it as your yoghurt can split. Refrigerate and enjoy!
