Hey there! I’m Britney. I’m Britney, a nature-loving, wellness-conscious mum with a passion for flavorful, wholesome food. When I’m not searching for waves somewhere in Indonesia or at the gym, I’m usually cooking up something delicious in the kitchen. I’m a sucker for Mexican food, home-made nut butters, good quality chocolate, decaf oat lattes and incredibly delicious vegan recipes, I’m all about nourishing my body and soul.
I also have a big passion for the environment and sustainability. My love for the environment was ignited during my travels through over 80 countries, each trip offering a glimpse of the world’s breathtaking diversity. These experiences showed me just how insanely beautiful this world of ours is, from chilled mountain forests in the Swiss Alps, palm trees and coconut beaches in central America, ice climbing glaciers in New Zealand, the extreme winds of the top of the highest mountains in Africa, sailing around deserted islands of the Great Barrier Reef, spotting gorillas in steamy Ugandan rainforests, hanging out with camels in Moroccan deserts to swimming with sharks and seals in the Galapagos … all these snapshots I was privileged enough to see gave me such an appreciation for our world, and with each incredible adventure, my purpose and drive to protect our planet started growing stronger and stronger.
Through these same years, I stumbled upon a profound realization: the profound impact of our dietary choices on the environment. It was a revelation that spurred my journey towards a plant-based lifestyle—a conscious decision to align my plate with my principles. I firmly believe that every meal holds the potential to be a force for good, a catalyst for change in the fight against climate change and environmental degradation. I inherently believe that each individual does care about our world, however often feels powerless to do anything about it, but I’m here to give you very simple (and delicious) ways how you can have a positive impact on our world.
I ran my own vegan catering business for years sharing my food with the masses! Weddings, functions, birthdays, galas, retreats … you name it I did it! We even had a snake come through our pop up kitchen in the middle of a country wedding once! Along this journey I also worked with some incredible other local vegan chefs and restaurants, running guest appearance nights, pop ups at local markets and any other incredible opportunities that came my way. After a while I felt like it was time for a change, and find a way to share all the recipes people were constantly asking about! And this is where onecupofkindness was born!
I truly believe that each of us needs to start thinking about what we can do in our daily lives, and how that amounts up to what we see around us, to protect these incredible unique identities of the world that makes up what it is. Of course, I understand that embracing a vegan lifestyle isn’t feasible for everyone, but I’m here to show you that even small shifts in our eating habits can yield significant benefits for both our health and the planet.
